Acipenser Baerii or Siberian Sturgeon is a river sturgeon found in Siberia that inhabits deep parts of large rivers, with moderate to swift currents. Acipenser baerii can live up to 60 years and usually weighs less than 65 kgs.
Noted for its gray to black color, small to medium grain size, and a unique sweet brine finish. Baerii caviar is a great entry level product that works wonders standalone or incorporated as a topping on seared scallops or sautéed fish.
